Food cost questions

How do you calculate food cost percentage?

Divide the cost to make one plate by its menu price and multiply by 100. A dish that costs $4.62 and sells for $14.50 has a food cost of 31.9%.

What is yield?

The share of an ingredient you can actually use after trimming, peeling or cooking. Onions with an 85% yield cost more per usable gram than their label price: divide the cost by 0.85.

What is a good food cost percentage?

It depends on the dish and your other costs. Set your own target for each kind of dish, then check every dish against it. This calculator uses the target you enter.
